APPLE PIE FILLING 
8 qt. apples
pinch of salt
10 c. water
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. lemon juice

Peel and slice apples. Add apples, salt, water, sugar and cornstarch together and cook until it is bubbly. Add cinnamon, nutmeg and lemon juice. Put in quart jars and process in pressure canner on 5 pounds pressure for 8 minutes. One quart makes a large pie.
