JAPANESE POTATO SALAD 
4 c. mashed potatoes (do not whip or add milk)
Grated or sliced cucumber
1/2 sm. carrot, grated
1 tbsp. sugar
1 tsp. lemon juice
1/8 tsp. salt
Mayonnaise
1 sm. can mandarin oranges, well drained

Put mashed potatoes in a bowl. Clean cucumber well and grate or slice; remove seeds and add to bowl. Clean and grate carrot and add to bowl.

Mix small amount of mayonnaise with sugar, lemon juice and salt. Mix with the potatoes and vegetables and add enough mayonnaise to hold salad together but not get too strong tasting. Fold in mandarin oranges. (Can also add drained chunk pineapple or chopped apple with skin left on.) Just before serving, decorate with halved mini tomatoes and sliced hard boiled egg.
