GERMAN APPLE TORTE 
1 egg
3/4 cup sugar
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup peeled, diced apples
1/2 cup chopped walnuts
1 teaspoon vanilla or grated rind of 1 orange

Beat egg with an electric mixer until light and lemon colored. Gradually beat in sugar until mixture is thick and pale (This beating is very important to prevent sugariness). Mix flour, baking powder, salt, and gently fold into egg mixture. Stir in apples, walnuts and vanilla.

Generously butter an 8-inch square pan, pour in batter. Bake in a pre-heated 350°F oven for 35-40 minutes or until top is golden brown and crunchy. Serve warm.

Serves 6.
