BREAKFAST OATMEAL MUFFINS 
2 eggs
1/2 c. sugar
2 c. buttermilk
2/3 c. dark molasses
3 c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 1/2 c. oats
2/3 c. chocolate chips
3 c. trail mix

(I use homemade trail mix - combining almonds, sunflower nuts, raisins, dates and pumpkin seeds, which I also add to homemade oatmeal for breakfast.)

Beat eggs until light; gradually add sugar. Blend in buttermilk and molasses. Sift dry ingredients; add to buttermilk mixture. Beat only until blended. Stir in oats, trail mix and chocolate chips, just enough to combine evenly. Fill muffin cups (use paper liners) and bake about 20 minutes at 350 degrees. Makes about 30. Great for mid morning snack.
