BAKED BEANS WITH MAPLE SYRUP 
2 lb. dried beans (yellow eye or soldier)
6 oz. salt pork
1 tbsp. salt
1/4 tsp. ginger
1 tsp. dry mustard
1 c. sugar (white)
1 c. maple syrup

Soak beans overnight in cold water. Rinse, parboil until skins crack when blown upon. Add remaining ingredients. Cover with water. Bake in 325 degree oven for 4 to 4 1/2 hours.
