CARROT CAKE 
CAKE:

2 c. flour
2 c. sugar
1 1/2 c. oil
2 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
4 lg. eggs
3 c. finely grated carrots

FROSTING:

2 c. powdered sugar
3 oz. cream cheese, softened
1/2 sq. soft butter
2 tsp. vanilla
Coconut
Walnuts

Mix dry ingredients, add oil, eggs one at a time and carrots. Mix thoroughly. Bake in cake pan at 350 degrees for 35-40 minutes. When cake is cooled mix frosting ingredients together and frost cake.
