CARROT AND PINEAPPLE CAKE 
1 c. oil
1 1/2 c. sugar
3 eggs
2 c. flour
1 c. coconut
2 c. grated carrots or baby food
2 tsp. baking soda
1/4 tsp. salt
2 tsp. cinnamon
1 c. crushed pineapple with juice
1 c. walnuts, chopped
Greased 9x13 inch cake pan

Sift flour with soda and cinnamon. Combine oil, sugar, salt and beat together. Add flour mixture gradually until well mixed. Add coconut, pineapple and juice, carrots and nuts. Bake at 350 degrees for 45 minutes.

Frost with:

1/4 c. butter
3 oz. cream cheese
2 c. powdered sugar
Vanilla

Mix together until smooth.
