CARROT PINEAPPLE CAKE 
1 1/2 c. sifted cake flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
Add 2/3 c. salad oil
2 eggs
1 c. grated carrots
1/2 c. crushed pineapple with syrup
1 tsp. vanilla

Mix until moist. Beat 2 minutes at medium speed. Bake 35 minutes at 350 degrees in 9 x 9 inch pan.

ICING:

Beat 3 ounces cream cheese with 1 tablespoon butter. Add 2 1/2 cups confectioners' sugar, 1 teaspoon vanilla. Beat until fluffy. Add milk - very little.
