PINEAPPLE-CARROT CAKE | |
Mix together: 2 c. flour 1 tsp. cinnamon 2 tsp. baking powder 2 c. sugar 1 1/2 tsp. baking soda Stir in: 1 1/2 c. oil 4 eggs When well blended, add: 2 c. grated carrots 1 (20 oz.) can crushed pineapple (drained) 1 1/2 c. chopped walnuts Pour into 13x9 pan. 325 degree oven. Bake 50 minutes. ICING FOR PINEAPPLE-CARROT CAKE: Blend together: 1 (3 oz.) pkg. cream cheese 1 stick butter 1 box confectioners' sugar 1 tsp. vanilla 1 c. coconut (optional) |
