CHICKEN CURRY CASSEROLE 
3 chicken breasts, cooked and cubed
4 c. rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 pkg. chopped, frozen broccoli, cooked and drained
1 c. mayonnaise
1 tbsp. lemon juice
1/2 tsp. curry
Cheddar cheese to top

Mix soups, lemon juice, curry, and mayonnaise. Layer (in 2 quart casserole) : 1/2 rice, 1/2 chicken, 1/2 broccoli, and 1/2 soup. Then, repeat. Top with grated cheese. Bake at 350 degrees for 30 minutes or until bubbly. Enjoy!

I modified this recipe a bit, but that aside, cooking it for only thirty minutes is definitely not enough. I ended up preparing eggs and toast tonight after I put a spoon into the casserole of crunchy rice. It's still in the oven, and I think we're going on an hour and a half (might not have taken that long if I hadn't cooled it for ten minutes in the interim). It's probably quite tasty besides that! :)

I have a similar recipe and when I saw the amount of rice in this one knew it was 1) too much rice and 2) the other recipes (mine included) indicate to either use cooked rice or "quick rice."
