BOILED ZUCCHINI 
2 med. zucchini, peeled, seeded & sliced
1 med. onion, sliced

Mix zucchini and onion and put in pan with 1/2 cup water, salt and pepper to taste. Cook until soft. Drain and mash. Cook again until all liquid is gone. Add 1 tablespoon butter and 3/4 cup Velveeta cheese. Cook long enough to melt the cheese. Mix well.
