LOW-FAT COLESLAW 
16 oz pkg. raw cabbage
1/2 cup red cabbage, shredded
5 scallions, chopped
4 oz. shelled pumpkin seeds, toasted
8 oz. slivered almonds, toasted
1 pkg. ramen Asian soup mix, noodles crushed and toasted

DRESSING:

1 ramen flavor packet
1/2 cup vegetable oil
1 tbsp. sesame oil
1/3 cup cider vinegar
1 tsp. soy sauce

In a jar or cruet, mix ramen flavor packet with oils, vinegar and soy sauce.

Mix package cabbage and shredded red cabbage with scallions, seeds, almonds and noodles together.

Toasting Tip: I toasted the seeds and ramen noodles by putting them separately on a cookie sheet and baking them in a 350°F oven for 10 minutes. Check each toasted item, time varies by a minute or two.
