MORAVIAN APPLESAUCE CAKE | |
1 1/2 c. thick applesauce 1 stick (1/4 lb.) butter 2/3 c. brown sugar, well packed in cup 2 eggs, well beaten 1 c. raisins, "plumped" 5 minutes in hot water 2 c. sifted flour 2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. cloves 1 c. chopped walnuts In a saucepan, warm applesauce; add butter and stir until melted. Stir in sugar, eggs and raisins. Remove from heat. Mix flour, soda, salt and spices; stir in applesauce mixture. Add nuts. Pour into greased 9 1/4 x 5 1/2 inch loaf pan. Bake in preheated 350 degree oven for 1 hour or until toothpick comes out clean. The top of the cake will crack. Remove from pan and cool. |
