APPLESAUCE BUTTERSCOTCH CAKE 
1/2 c. butter, melted & cooled
1 c. dark brown sugar
1 egg
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. applesauce
1 tsp. vanilla
1 (6 oz.) pkg. butterscotch chips
1/3 c. sugar
1/3 c. walnuts or pecans, chopped

Beat butter, brown sugar and egg in a large bowl with electric mixer until blended. Sift flour, soda and salt together. Add to butter mix, 1/3 at a time alternating with the applesauce. Mix thoroughly and add vanilla. Pour into 13 x 9 x 2 inch pan that has been greased and floured. Sprinkle butterscotch chips, sugar and nuts on top. Bake in a 350 degree oven for 35 minutes.
