HOT TOMATO HAMBURGER WITH RICE 
1 lb. ground beef
1/2 green pepper, sliced thin with seeds and white pulp removed
1 c. uncooked rice
1 tbsp. vegetable oil
1/2 onion, chopped fine
1 (11 oz.) can Rotel tomatoes and green chilies, chopped and drained (reserve liquid)
1/2 tsp. pepper (optional)
Water added to Ro-tel liquid to make 2 cups
1/2 tsp. salt

Brown the ground beef in hot fat, separating with a fork as it cooks. Add green pepper strips, onions, and Ro-tel tomatoes and green chilies, and continue to fry on medium heat for 5 minutes. Drain excess fat. Gently stir in seasonings, rice, reserved Ro-tel liquid with water. Cover, reduce heat, and cook for about 15 minutes. Do not uncover or stir during last 15 minutes of cooking. Makes 4-5 servings.
