JANE MORGAN'S HONEY CAKE | |
6 eggs 1 lb. honey 1 1/2 c. sugar 1 c. cold coffee 1 tsp. lemon rind, grated 1 c. orange juice 5 1/2 c. cake flour 3 tsp. baking powder 2 tsp. baking soda 3/4 c. vegetable oil 1. Beat eggs until lemon colored. 2. Add remaining ingredients, sifting cake flour and baking powder together. Blend well. 3. Pour batter into a large, well greased, deep, square cake pan. Bake cake in preheated 350 degree F. oven about 1 1/4 hours, or until cake tests done when a toothpick comes out dry. 4. Let stand 10 minutes before turning out on cake rack. Serves 15- 20. NOTE: Jane's honey cake is very large. If preferred, bake in 2 small cake pans or 1 large spring cake pan. |
