HONEY APPLE CAKE 
Flip this cake carefully when cooled so the topping is on top!

Batter:

1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/4 c. (1/2 stick) butter, soft
1/2 c. honey
1 egg
1 tsp. vinegar plus enough milk to make 1/3 c.

Sift flour, measure and resift with baking soda, baking powder and salt. Beat butter to cream it and gradually beat in the 1/2 cup honey until well blended. Add egg and beat vigorously. Blend in the flour mixture alternately with additions of milk. Use flour first and last in these additions and beat thoroughly.

Topping:

1/4 c. (1/2 stick) butter
2 tbsp. honey
1/4 c. light brown sugar
1/4 tsp. nutmeg
1 3/4 c. fresh apple slices

Melt butter for topping in an 8x8x2-inch pan. Drizzle in the honey. Combine brown sugar and nutmeg. When mixed, sprinkle evenly over the pan. Arrange apple slices overlapping slightly in neat rows over it all. Pour batter over the apples, spreading evenly and taking care not to disturb apples. Bake at 350°F for 45 minutes.
