UKRAINIAN HONEY CAKE | |
1/2 c. sugar 5 eggs, separated 1/2 c. buckwheat honey 1 tsp. baking soda 2 tsp. sour cream 1 c. cake flour 1 tsp. baking powder 1/2 c. oil Preheat oven to 300°. Line a 9"x11" pan with wax paper. Beat sugar and egg yolks together. Add honey and beat together. Add baking soda and sour cream and beat together. Add flour with baking powder and beat. Add oil and beat. Fold in beaten egg whites (stiff). Bake 45 minutes. Let cool 5 minutes in pan, then turn out on a cloth on a pillow (this holds steam in cake). |

Just for the sake of ethnicity-- many variations on Uke honey cake: traditional basic recipes call for only honey as cane sugar was imported, pricey and hard to find and honey was local. But if you were wealthier more ingredients were added like cane sugar, allspice, coffee etc. Your right on target with the buckwheat though.
