PATTES SAUERKRAUT SALAD 
1 qt. plastic bag sauerkraut, drained 10 minutes
1 sm. sweet onion, chopped fine
1 sm. green pepper, chopped fine
1 c. diced celery
1 c. chopped pimentos
2/3 c. vinegar (brown or white)
1/3 c. water
1/2 c. salad oil
1 1/2 c. sugar

Mix well. Cover and let stand in refrigerator 3 days. Excellent accompaniment to a pork dinner.
