SWEET POTATO MERINGUE PIE | |
3 c. sweet potatoes, cooked 1 c. butter 3 c. sugar 4 egg yolks 1 c. milk 6 tbsp. flour 1 tsp. vanilla 1 (9-inch) pie shell, unbaked Mash hot potatoes in mixer, add butter, add sugar and flour. Then add egg yolks, one at a time. Beat thoroughly. Add milk and vanilla. Pour in pie shell. Bake 10 minutes at 400 degrees, then 35 minutes at 375 degrees. Top with meringue and brown. |
