MARDI GRAS FILLING 
1/2 c. sugar
1 tbsp. cornstarch
1/2 c. evaporated milk
1/3 c. butterscotch pieces
1 egg yolk, beaten
2 tbsp. butter
1 c. flaked coconut
1 c. chopped pecans or walnuts

Combine sugar and cornstarch in a 2 quart saucepan. Stir in milk, butterscotch pieces and egg yolk. Cook over medium heat, stirring constantly, until thick. Remove from heat, add butter, coconut and nuts. Cool.
