MEDITERRANEAN-STYLE GREEN BEANS 
1 lg. onion, chopped
1/4 c. olive or vegetable oil
1/2 green pepper, chopped
1 stalk celery, chopped
1 lb. fresh green beans, cut into 2-inch pieces
1/2 c. water
1 tsp. salt
1/4 tsp. pepper

Saute onion in oil over medium heat until tender. Add green pepper and celery; cover and cook over low heat 5 minutes, stirring occasionally. Add green beans, water, salt and pepper; cover and cook 20 minutes, stirring occasionally. Yield: 5 to 6 servings.
