JALAPENO SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion (I increase this amt.)
1/2 c. evaporated milk
1/2 c. vegetable liquid (from spinach)
1/2 tsp. pepper
1/2 tsp. celery salt
1/2 tsp. garlic salt
6 oz. roll jalapeno cheese

Cook spinach according to package. Drain AND RESERVE 1/2 cup of the liquid. melt butter in pan; add flour and stir in onion, milk and seasonings. Add vegetable liquid. (This is similar to making a sauce.) Add the cheese; stir until melted. Combine with the cooked spinach in a buttered dish. (This can be frozen at this stage.) Cook at 350 degrees until cheese is bubbly and SLIGHTLY brown.
