APPLE CAKE 
1 c. sugar
2 c. diced apples
1/2 c. vegetable oil
1 beaten egg
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
Confectioners' sugar to sprinkle on top of cooled cake

Add sugar to apples. Let stand 10 minutes. Meanwhile, sift flour and spices; set aside. Blend oil and egg into apple mixture. Add flour mixture and beat until blended. Pour into greased 9 x 9 inch pan. Bake at 350 degrees for 35 to 40 minutes. Cool cake. Sprinkle confectioners' sugar when cooled.
