SOLE FILLETS VERA CRUZ 
1 avocado, finely diced
2 tbsp. lemon juice
2 tsp. olive oil
1/4 c. diced green onions with tops
1 tomato, diced
4-5 drops Tabasco
Salt & Pepper to taste
2 tbsp. butter
4 sole fillets (may use other fish)

Combine first 7 ingredients and set aside. Brush fish with a little lemon butter and cook on grill until half done, using heavy duty foil with a few small holes. When half done, spoon some of mixture over fish, reserving rest of sauce to spoon over fish before serving. Serves 4.
