LEMON-PINEAPPLE CONGEALED SALAD 
1 lg. or 2 sm. lemon jello
1 lg. can crushed pineapple
1 c. mayonnaise
1 1/2 c. hot water
1 lg. can evaporated milk
Shredded cheddar cheese

Dissolve jello in hot water; chill in refrigerator while preparing remaining ingredients. With wire whisk gently mix milk into mayonnaise until smooth. Add crushed pineapple (do not drain). When jello is thickened (about half gelled), stir into mayo/milk mixture and turn into a 2-quart flat dish. Return to refrigerator until set. Sprinkle with cheese; cut into squares. Serve on lettuce.

My mother-in-law use to order this almost every time she ate at a local cafeteria (starts with "M"), each time asking for the recipe. She finally got it!
