CHEESY TURKEY CASSEROLE 
1/2 c. chopped green pepper
3 tbsp. chopped onion
2 tbsp. butter
2 tbsp. flour
1 c. milk
2 1/2 oz. sliced mushrooms
1 1/2 c. shredded sharp cheese, divided
1/2 tsp. salt
1/2 tsp. lemon pepper
1/2 tsp. dry mustard
3 1/2 oz. cooked spaghetti, drained
2 c. diced cooked turkey

Saute green pepper and onions in butter until onion is tender. Add flour, stirring until bubbly. Stir in milk and mushrooms with liquid. Heat to boiling, stirring constantly. Remove from flame.

Add 1 cup cheese, salt, lemon pepper and mustard, stirring until cheese melts. Stir in spaghetti and turkey. Pour into 1 1/2 quart casserole. Cover. Bake at 350 degrees for 40 minutes. Remove cover. Sprinkle 1/2 cup cheese around outer edge of casserole. Bake until cheese melts, about 5 minutes. A good way to use holiday leftover turkey.
