SCOTCH OATMEAL BREAD 
1 c. oatmeal
1/4 c. sugar
1 tbsp. salt
1/4 c. shortening
3 tbsp. molasses
1 c. boiling water
1 pkg. dry yeast
1 c. warm water
1/2 c. raisins
5 1/2 c. flour

Combine first 6 ingredients. Cool to lukewarm. Dissolve yeast in warm water and add to oatmeal mixture. Stir in flour and raisins.

Knead on floured surfaces 8-10 minutes. Let rise until double in bulk. Punch down and let rise again. Bake at 350 degrees for 45-50 minutes. Makes 2 loaves.
