CREAM PUFFS & FILLING 
CREAM PUFFS:

1/2 c. shortening
1 c. boiling water
1 c. flour
1 tsp. salt
4 eggs

FILLING:

1/2 c. flour (scant)
1 c. sugar
1/4 tsp. salt
3 c. scalded milk
5 slightly beaten egg yolks
3 tbsp. butter
2 tsp. vanilla

Bring shortening and water to boil, so shortening is melted. Add flour and salt, all at once. Beat until ball forms (about 1 minute). Cool slightly. Add eggs one at a time, beating well after each. Drop on greased cookie sheet. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake about 25 to 30 minutes. Remove from cookie sheet. When cool, cut circle out on top for filling.

FILLING: Add milk to dry ingredients slowly. Cook in double boiler 15 to 20 minutes until thickened. Add egg yolks alternating as for gravy. Add butter, cook 5 minutes. Remove from heat. Cool, add vanilla. When cool, fill with filling, put chocolate frosting on top to cover where you cut.
