FILLING FOR CREAM PUFFS 
3 1/2 tbsp. flour
1/2 c. sugar
2 c. milk
3 egg yolks
1 egg white
1/2 tbsp. vanilla

Caramelize sugar; sprinkle flour in. Separate eggs. Beat yolks slightly. Heat milk. When hot, add about 1/4 of it to sugar mixture. Add egg yolks. Mix well and add to rest of milk. Cook in double boiler until mixture thickens. Add ONE beaten egg white gradually. Add 1/2 teaspoon of vanilla and then when ready to eat. Add whipped cream to this mixture.
