BURNT RANCH BREAD - ROLLS | |
3 tbsp. yeast 1/2 c. sugar 1 c. water (warm not hot) 3 c. milk, canned, whole or powdered (I use canned, 1 can diluted makes 3 c.) 1/2 c. butter or shortening 8-10 c. flour 4-5 tsp. salt In large bowl, mix together yeast, sugar and water until yeast is wet. Let stand until it rises. Melt butter in microwave then mix with milk so it won't be too hot to add to yeast mixture. Add flour a little at a time. Can use a mixer until it starts to get stiff, then add the salt. Dump out on a floured surface, adding the remainder of flour. Knead at least 5 minutes, 10 is better, the bread will be satiny. Let rise double in size, punch down good. Let rise again to double size, now ready to put in pans. Let rise again. Bake at 375 degrees. Baking times vary so I check rolls after 15 minutes and loaves after 30 minutes. Makes 3 medium loaves and rolls or 2 medium loaves, rolls and cinnamon rolls. |
