LIMA BEAN CASSEROLE 
3 boxes Fordhook Lima Beans
1/2 pkg. dry Italian salad mix
4 slices bacon, fried crisp
2 tbsp. flour
1 sliced onion
1/2 tsp. oregano
1 c. milk
8 oz. pkg. grated Mozzarella cheese

Cook beans in 1 1/2 cups water. Drain but reserve the liquid. Fry bacon and set aside. Saute onion and set aside. Blend flour in 3 tablespoons of drippings and add milk, Italian mix, and oregano. Put beans in this sauce and add enough reserved liquid to make a light sauce.

Butter large casserole. Put in layer of beans, 1/2 the crumbled bacon, 1/2 the onion and 1/2 the cheese. Repeat with the rest of ingredients topping with cheese. Bake at 350 degrees for 30 minutes, covered lightly with foil for the first 15 minutes.
