OVEN-FRIED FISH 
2 lbs. catfish or snapper fillets
1 egg, beaten
1/2 c. Italian seasoned bread crumbs or cornmeal
1/4 c. butter, melted
2 tbsp. lemon juice

Dip fillets into egg; lightly coat with crumbs or meal. Arrange fish in a single layer on a well greased shallow baking pan. Combine butter and lemon juice; drizzle over fish. Bake at 450 degrees for 15 to 18 minutes or until fish flakes easily when tested with a fork. Yield 6 to 8 servings. Makes good fish sandwiches.
