PAUA SOUP 
1 1/2 paua, minced
2 pt. milk
1/2 tsp. salt
Pepper to taste
2 tbsp. flour

Prepare paua as usual. Boil with half of the milk for 30 minutes, strain. Mix the flour with some of the other half of the milk, then add the rest and heat slowly until it thickens. Season and serve sprinkled with chopped parsley or chives. Serves 6.
