IKE'S APPLE BUTTER CAKE 
1 cup white sugar
1/2 cup (1 stick) butter
2 eggs
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 cup apple juice (I use Simply Apple Brand. You can also use cider)
1/2 to 1 cup apple butter (depending on your taste)

Preheat oven to 350°F. Grease a 9x9-inch pan and set aside.

In bowl cream the sugar and butter together. Beat eggs into mixture, one at a time. Add vanilla extract.

Stir in the flour and baking powder, whip for 1 minute or until mixture is smooth.

Finally add apple juice and apple butter, beat for 30 seconds until color blends evenly. Pour batter in the pan and spread evenly.

Bake at 350°F for 30 to 40 minutes (carefully push your fingertip in center of cake, if it pushes back up it is done). Cake will be nice golden brown.

For a topping you can apply additional apple butter evenly over entire cake - it's good with and without it.

Nice, simple cake and pretty tasty. My grandma used to make spice cake with hot apple butter spread on top, which was delicious, so I added some apple pie spice to the cake to boost the spice a bit (there is some from the apple butter, depending on the brand you use).
