RED ONION POTATO SALAD 
6 med. potatoes
1 c. sliced celery
1 c. thinly sliced red onion
1/3 c. chopped fresh parsley
1/4 c. low-calorie Italian dressing
3 tbsp. wine vinegar
2 tsp. salt
Dash cayenne pepper

Boil potatoes in skins. Peel and slice while hot. Place potatoes in large bowl. Add Italian dressing. Mix well. Chill. Combine remaining ingredients. Add to chilled potatoes. Chill until served.
