SPINACH QUICHE 
1/2 c. crushed whole wheat crackers
1 carton Egg Beaters
1/2 c. skim milk
1/2 c. plain no-fat yogurt
1/2 c. low-fat cottage cheese
Pepper to taste
1/2 c. reduced fat Mozzarella cheese
10 oz. frozen chopped spinach, thawed

Mix crumbs with just enough Egg Beaters to moisten. Spread in bottom of pie plate (spray with Pam first). Beat together Egg Beaters, milk, yogurt, cottage cheese, pepper; stir in cheese and spinach. Pour into pan and bake at 350 degrees for 35-45 minutes.
