EGGPLANT CASSEROLE 
1 med. eggplant
2 med. onions, chopped
2 stalks celery, sliced
1/4 green pepper, chopped
1 c. tomato sauce
1/2 lb. grated cheese
2 oz. corn chips

Steam chopped vegetables until tender. Mix tomato sauce, cheese and corn chips and add half of mixture and pour in baking dish. Top with rest of tomato mixture. Bake at 350 degrees until cheese is melted.
