LANAI PASTA SALAD 
1 (20 oz.) can pineapple chunks
2 c. fresh snow peas (or 10 oz. frozen, defrosted)
1 c. sliced carrots
1/4 c. chopped parsley
3 c. cooked spiral pasta
1 c. sliced cucumbers
1 c. sliced pepper (red or green)
1/2 c. Italian salad dressing

Drain pineapple, reserving 1/4 cup juice. Combine pineapple and reserved juice with remaining ingredients. Serves 6 to 8.
