LEFTOVER LAMB MEAL 
Sliced cold lamb
4 oz. sliced mushrooms
3 chop shallot
1 tbsp. butter/oleo
1 1/4 tbsp. flour
1 c. bouillon/stock
1 tbsp. tomato paste
1 tsp. Bouquet garni
1/4 c. Madeira
3 tbsp. white wine
Salt
Pepper

Prepare stock. Saute mushrooms and shallot in butter. Sprinkle with flour and brown. Add bouillon, wine, salt, pepper and tomato paste. Cook over low heat 10 minutes. Warm meat in microwave. Pour sauce over meat. Serve over noodles. Serves 3.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This was delicious. We used Marsala wine instead of Madeira and substituted a couple of tablespoons of tomato sauce for the tomato paste. We sliced pieces from a leftover leg of rare lamb.
