SCALLOPED SPINACH 
6 bacon strips, diced
1/4 c. chopped onion
1 (10 oz.) pkg. fresh spinach, chopped
2 c. soft bread crumbs, divided
2 c. milk
2 eggs, beaten
1/4 c. butter, melted
1/2 tsp. salt
1/8 tsp. pepper

In skillet, cook bacon until crisp; drain on paper towel. Sauté onion in drippings until tender. Place spinach and small amount of water in saucepan; cover and cook until tender, approximately 8 minutes. Drain well and place in large bowl. Add onion, 1 1/2 cups bread crumbs, milk, eggs, butter, salt and pepper; mix together. Pour into a greased 2-quart baking dish. Top with bacon and the remaining crumbs.

Bake, uncovered, at 350°F for 50 to 60 minutes or until knife inserted near center comes out clean.

Makes 6 to 8 servings.
