CARROT COOKIES 
1 cup grated raw carrots
1/4 teaspoon baking soda soda mixed in 1 cup honey
1/2 cup butter (slightly melted)
2 eggs
1 cup raisins
1 cup chopped nuts
2 cups quick cooking oatmeal
2 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 350°F. Grate carrots, add honey and baking soda, mix well, add slightly melted butter, eggs, chopped raisins and nuts.

Beat in the oatmeal, add remaining dry ingredients sifted together with flour; mix thoroughly.

Drop with teaspoon onto parchment lined or lightly greased cookie sheets. Flatten with a fork or spoon.

Bake 20 to 25 minutes or until golden brown.

Makes 7 dozen cookies.
