CARROT COOKIES 
2 c. all-purpose flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1 c. (2 sticks) butter, softened
3/4 c. sugar
1 egg
1 c. carrots, cooked and mashed -OR-
1 c. raw carrots, grated
1/4 c. milk
1 tsp. vanilla
1 tsp. lemon or orange extract
1 c. bran flakes

Sift together flour, baking powder and salt. Blend butter and sugar; add egg and beat well. Stir in carrots, milk, vanilla and extract. Add dry ingredients and bran flakes; mix well. Drop by level tablespoons on greased baking sheets. Bake in 375°F oven for about 18 minutes if using cooked carrots, or about 12 minutes for raw carrots.

Frosting:

1 c. confectioners' sugar, sifted
2 tbsp. orange juice

Frost cookies with 1 cup sifted confectioners' sugar moistened with 2 tablespoons orange juice when cookies are cool.

Makes about 4 1/2 dozen.
