ZUCCHINI BREAD 
4 eggs
1 c. salad oil
1 3/4 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 1/4 c. flour
1/2 tsp. salt
1 tsp. baking soda
3/4 tsp. baking powder
2 tsp. cinnamon
1 c. raisins
1/2 c. chopped nuts

Beat eggs until fluffy and light; add oil, sugar, vanilla and zucchini. Mix lightly but well. Sift dry ingredients and mix into egg mixture. Add nuts and raisins. Pour into 2 loaf pans. Bake at 350 degrees for 45 minutes. Test for doneness.
