CHINESE PEPPER STEAK 
1 lb. beef, cut in thin strips
4 tbsp. butter
2 tbsp. chopped onion
1 clove garlic, minced
1 c. celery, sliced
2 green peppers, cut in thin strips
1/2 c. beef broth
1/2 tsp. each salt & pepper
2 tsp. cornstarch
2 tbsp. cold water
1 tsp. soy sauce

Brown beef in butter. Add onions, celery, pepper and garlic. Saute until tender, add broth, salt and pepper. Cover and simmer 20 minutes. Blend cornstarch with water and soy sauce until smooth. Add to mixture and simmer 5 minutes. Serve with rice or noodles.
