CHEESE MUFFINS WITH GREEN PEPPER 
1 c. flour
4 tsp. baking powder
1 tsp. salt
1 tbsp. sugar
1 c. cornmeal
1 c. American cheese, grated
1/4 c. chopped green pepper
1 tbsp. grated or finely chopped onion
2 eggs, beaten
1 c. milk
2-3 tbsp. shortening or oil

Mix dry ingredients. Add cheese, green pepper and onion; mix.

Combine eggs, milk, oil and pour into flour mixture. Stir just to moisten the dry ingredients. Do not beat.

Fill greased muffin pan (1 dozen) 2/3 full and bake in hot oven, 400 degrees, about 20 to 25 minutes. Remove from oven, loosen the muffins, turn them sideways.
