CHEESY EGGPLANT 
1 med. eggplant, cut in 8 slices
2 eggs, beaten
1 1/2 c. soft bread crumbs
1 can spaghetti sauce
1 (8 oz.) pkg. cheese slices or Parmesan cheese

Wash and slice eggplant. Coat with egg, then add bread crumbs. Brown on both sides until eggplant is almost done. Put in baking dish. Add sauce and cheese. Bake at 350 degrees for 15-20 minutes.
