EGGPLANT PARMESAN 
1 med. eggplant, young with few seeds
1 egg, beaten with milk
Bread crumbs, Italian style
Spaghetti sauce
4 oz. Mozzarella cheese

Peel and slice eggplant. Coat with bread crumbs, egg mixture and bread crumbs again. Fry in pan in hot oil. Turn over to brown on both sides. Remove from pan and drain on paper towels. Coat bottom of 13 x 9 baking dish with approximately 1/2 cup spaghetti sauce. Layer fried eggplant in dish. Cover with spaghetti sauce. Top with Mozzarella cheese. Broil to melt cheese. Sprinkle with Parmesan cheese and broil a few more minutes.
