EGGPLANT PARMESAN 
1 med. eggplant
1 egg
1/3 c. seasoned bread crumbs
1 tbsp. olive oil
6 tbsp. grated Ramon cheese
2 c. spaghetti or pizza sauce
6 oz. shredded Mozzarella

(Microwave dish) Cook 15 to 20 minutes. Preparation time: 20 minutes. Serves 3 to 4.

Cut eggplant in 1/2 inch thick slices. Beat egg and olive oil. Blend bread crumbs and cheese in a shallow bowl. Dip each eggplant slice in egg then bread crumbs to coat. Arrange slices overlapping slightly in 12 inch round baking dish. Cover with paper towel. Cook on HIGH 10 to 14 minutes until eggplant is tender. Remove from microwave. Spoon sauce over eggplant. Sprinkle with Mozzarella and grated Parmesan cheese. Cook uncovered on HIGH 5 minutes until cheese melts. Serve hot with Italian bread.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Really easy and not bad for microwave especially on these HOT days when you don't need any extra heat! Love eggplant!
