CHICKEN FRIED STEAK 
Round steak, 1/2" thick
2 eggs
2 tbsp. milk
Soda cracker crumbs
Salt & pepper to taste
1/4 c. salad oil

Pound each side of steak well, to break up fibers. Cut in serving sized pieces. Mix eggs and milk. Dip meat in egg mixture, then in finely crumbled cracker crumbs carefully... no bare spots.

Brown steak in oil that's hot, but not smoking. Turn carefully with spatula. Season with salt and pepper. Cover with domed lid and cook over very low heat 45-60 minutes. May have to turn it once or twice, but don't overdo. Moisture in covered skillet makes it so good.
